    Anyone who knows me, knows I wasn’t a huge salad fan growing up, but I do I love an Iceberg lettuce, which I affectionately call “Trash Lettuce”.

    This is a very simple side that packs flavour, carried by the beautiful crisp leaves.

    It takes the best parts of two different side salads I’ve loved previously – one from the old Vue Street Bar days, and the other from a delicious meal at 1800Lasagne.

    Simply cut an iceberg lettuce into eighths,  remove the base “core”, then drizzle on some deliciously garlicky aioli, and follow with fresh pecorino grated over the top like snow.  Finish with a simple seasoning of salt and cracked pepper.
